These Blackberry Popsicles are a fun, fruity summer treat. Made from just three ingredients! These sweet treats are a delicious way to keep cool.

These Blackberry Popsicles are a fun, fruity frozen treat to keep you cool all summer long. Made from just three ingredients - frozen blackberries, sugar and water. You wont believe how easy it is to make these refreshing treats.

Ingredient Notes

Granulated Sugar – The sweetener in the popsicles

Water - heated with sugar to create our simple syrup

Blackberries - I used frozen blackberries as they are frozen at peak season instead of having to wait until July - August for fresh ones.

Step-by-Step Instructions

  1. In your high powered blender, pour in frozen blackberries to defrost. Set aside. Next, in a small pan, bring water and sugar to a boil for about 1 minute. Occasionally, whisk until the sugar is completely dissolved. Remove from heat and allow to cool to warm to the touch OR room temperature (about 30 minutes - 45 minutes).

  1. After the simply syrup has cooled, add it to the blender. Close the lid and blend on high speed for 1-2 minutes until smooth.

  1. Strain liquid using a fine mess strainer (to remove the seeds) into a large bowl. Use the back of a spoon to help liquid pass through.

  1. Pour liquid into the popsicle molds. Attach lid and stick in popsicle sticks. Freeze in the freezer overnight.

Expert Tip - placing the mold in an 8x8 baking pan helps safely move the molds to the freezer.

  1. Remove popsicles from mold when ready to enjoy. Eat and enjoy.

Expert Tips

Not all popsicles molds are the same. This mixture works perfectly for my mold. You could potentially need more or less depending on what kind of popsicle mold you use.

After removing these popsicles from the popsicle mold, either serve them immediately or store them in an airtight container or freezer bag for up to 1 month.

Use a container/bowl with a spout or a pitcher or funnel for easier pouring into the popsicle mold.

Make sure that you leave a little unfilled space (about ¼- ½ an inch) at the top of the molds to accommodate the liquid slightly expanding in the freezer. This also helps to make it easier when transporting the filled molds to the freezer.

Fresh or frozen fruit?

I like using frozen fruit for this recipe as frozen fruit is frozen at peak season providing the most flavor and this recipe can used and enjoyed all year long.

What can I use instead of popsicle mold?

Don't want to buy a popsicle mold? Instead you can use little paper cups (like dixie cups), pour popsicle mixture in, put the popsicle sticks in and freeze. When frozen and ready to enjoy just tear off the paper and enjoy.

Where can I find popsicle sticks?

Most popsicle molds come with some popsicles sticks. If you need to buy more you can find popsicle sticks just about anywhere, including Walmart's craft section, craft stores like Michaels and Joann's, and even online retailers like Amazon. You can even find popsicle sticks in your local Dollar Tree. Just make sure to use food safe popsicle sticks.
