Ingredients Notes

  • Peaches - use fresh peaches for the best result! Check out this article on how to tell if a peach is ripe. Can substitute with nectarines. If you love peaches like me, check out my Roasted and Smoked Peach Sorbet or Peach Burrata Arugula Salad.
  • Burrata - Ultra-creamy and providing dual textures from the curd-like inside and a solid mozzarella exterior. It has a rich, buttery and milky flavor.
  • Prosciutto - Look for high-quality & thinly sliced prosciutto.
  • Bread -  I used ciabatta for this recipe, however you can use whatever is your favorite crusty bread. Toast until golden. Bread can be grilled as well.  
  • Micro Greens - (optional) adds a pop of color. Could be substituted with fresh basil chiffonade cut.
  • Balsamic Glaze - a bit of acid while also providing sweetness and a bit of tartness. I used store-bought but you can also make it at home. Try this recipe from The Kitchn here.
  • Olive Oil - use a high quality olive oil for best flavor
  • Salt & Pepper to taste

Step-by-Step Instructions

  1. Slice bread into ½ inch thick pieces. Drizzle a bit on olive oil on top. Place on a sheet pan and broil in the oven for 1-2 minutes per side until golden.

  1. On a large platter, place burrata in the center. Place toasted ciabatta, peaches, and, prosciutto around the burrata.

  1. Drizzle balsamic glaze and olive oil around burrata. Season with flaky sea salt and freshly ground pepper. Top burrata with micro greens. Eat and enjoy.

Expert Tips

  • Ap-PEACH-iate Ripe Peaches! - The peaches are the star of the show here so be sure to use ripe ones for optimal flavor. 
  • Serve Room Temp - These are best served at room temperature so be sure to let the bread cool down after toasting it before you spread on the burrata cheese.

What is Burrata Cheese?

Burrata is an Italian cheese consisting of a thin shell of fresh mozzarella that encases a creamy filling of soft curd and cream. Burrata can be found in most grocery stores in the artisan cheese section near the fresh mozzarella and soft cheeses and sometimes where the prosciutto would be.

How can I tell is a peach is ripe?

Ripe peaches will smell sweet, have dark yellow color and will be slightly soft when squeezed.

Ingredients
  

  • 8 ounces burrata
  • 1 tablespoon balsamic glaze
  • 1 tablespoon olive oil
  • 3-4 ounces proscuitto
  • 1-2 peaches
  • 8 slices ciabatta toasted or your choice of toasted bread or crostini
  • sea salt
  • fresh ground pepper
  • 1 tablespoon microgreens optional

Instructions
