Dried apricots and dark chocolate make the best combination! This 2-ingredient recipe will blow your mind with flavor and can be topped with a variety of different toppings to make these Chocolate Dipped Apricots custom to your tastebuds.

Dried apricots are sweet and chewy dipped in a smooth dark chocolate (or chocolate of your choice). Plus, dried apricots can be found all year long so you can indulge is this treat whenever you want.

These also make a delicious and easy holiday gift. And, they are an unexpected treat to add to any charcuterie or dessert board.

Ingredient Notes

Chocolate - For all my chocolate dipping needs I use Ghirardelli Melting Wafers. They are delicious, easy to use and come in a variety of flavors - milk chocolate, dark chocolate, and white chocolate. Grab your favorite and start melting. No tempering is required to get that glossy chocolate coating! These can be found at most grocery stores in the baking aisle, Target, Walmart and even Amazon. It's the only ingredient in my One-Ingredient Chocolate Bag.

Dried Apricots - Be sure they’re not sweetened. Look for 100% dried apricots with no added sugar. There are also two main types of dried apricots - Turkish and California. Other than where the apricots were grown, the apricots have different color, taste and texture. California apricots have a darker orange color and are halved then dried resulting in having more curves and ripples in their shapes. Turkish Apricots are more commonly found and have a yellow-orange color and are dried whole without the pit and then halved and has much more uniformity in shape. I used Turkish dried apricots for this recipe.

Topping Variations

  • Chopped Nuts - pistachios, almonds, walnuts. Chopped nuts add a crunchy texture to the chocolate dipped apricots.
  • Sea Salt - Salt might seem like a strange addition with chocolate but salt enhances flavor and makes the perfect combination of salty and sweet with this recipe. Just be sure just to sprinkle just a little on.
  • Shredded Coconut

Step-by-Step Instruction

  1. Heat Ghirardelli Chocolate Melting Wafers according to package. I am using the double boil method. Melt chocolate until smooth and completely melted.

  1. Carefully transfer hot melted chocolate to a small bowl. Line a baking sheet/sheet pan with a piece of parchment paper or silicone mat. Dip apricots one at a time into chocolate about ½ way. Lift and let access chocolate fall off or carefully tap access chocolate off. Place on the sheet pan and repeat with remaining apricots.

  1. Allow apricots to sit until chocolate is completely set. Peel apricots from parchment paper and enjoy!

Expert Tips

  • Make sure all your equipment is absolutely dry and free from any water droplets, otherwise your chocolate will seize and be grainy.
  • Refrigerate if needed for quicker setting - I found that once I was done dipping all the apricots, the first ½ I dipped we're already set and the others ones we're close to being done as well! But, if you need to have the apricots set up quicker leave the dipped apricots in the fridge for a few minutes until set.
  • When dipping choose the right bowl - Use a small bowl with high walls something that you would maybe put a dip but bigger than a condiment bowl. You want to be able to make sure you can dip the apricots ½ way.

Recipe FAQ

Do I need to refrigerate the apricots?

Potentially! I found that when I was done dipping the apricots ½ of them had already set so it only took a few minutes at room temperature to set the rest. But, if you find yourself short on time you can place the tray in the fridge to set quicker.

Can I completely cover the apricots in chocolate?

Yes, you will want to double the amount of chocolate used. I recommend using a toothpick or fork to dip the apricots in so your hands don't get dirty.

Can I use normal chocolate chips?

Technically yes, you can if that's what available to you! But, I would recommend melting wafers as they are made for dipping.They melt super smoothly and set up firmly when used compared to chips which do not hold their shape.

Storage

Store in an airtight container at room temperature for up to 3 days.
