Got leftover red wine? Turn it into a cake! This Leftover Red Wine Chocolate Cake is incredibly moist with rich red wine flavor. It's chocolatey, decadent and so delicious. Not to mention, red wine and chocolate make the ultimate combination.
Whether you have a bottle of red you're trying to rid of or have leftover wine, you will want to make this truly decadent cake. It's served with a creamy mascarpone whipped cream, Strawberry Red Wine Sauce and fresh strawberries.

Red Wine Chocolate Cake
- Pre-heat oven to 350°F. Take your cake pan ( with a 6 cup capacity), spray with non-stick spray and set aside.
- In a large bowl (of a stand mixer), add in all dry ingredients whisky by hand or with the whisk attachment.
- Add in all wet ingredients and mix with the paddle attachment on stand mixer on medium speed until just combined.
- Pour batter into the prepared cake pan. Bake for 35-40 minutes or until a wooden skewer comes out clean.
- Cool in pan for 10 minutes then flip onto a cooling rack until room temperature.
- Place cake on serving plate. Top generously with mascarpone whipped cream (recipe below).
- Top with Strawberry Red Wine Sauce (recipe below).
- Garnish cake slices with whole or sliced strawberries if desired.
Strawberry Red Wine Sauce
- Thinly slice strawberries
- In a medium saucepan, add in strawberries, red wine*, and sugar. Bring to a boil and whisk frequently.
- Bring to a boil and stir occasionally.
- Reduce to a simmer and stir occasionally for 10 minutes, until strawberries are soft and sauce is slightly thickened.
- Remove from the stove. Let cool slightly.
- Place red wine and strawberries into a blender.
- Blend until smooth. Cool to room temperature.
- Store in an airtight container in the fridge for about 2 hours.
Mascarpone Whipped Cream
- Add the heavy whipping cream, vanilla and powdered sugar to a large mixer bowl.
- Whip on high speed until stiff peaks form.
- Add the mascarpone cheese to the whipped cream and whip until combined. It will happen fairly quickly.
- Use a silicone spatula to make sure mascarpone is fully incorporated. Set aside in the fridge until ready to use.
Recipe Notes
- How much wine do I need?
- ½-1 CUP: Just make the Red Wine Chocolate Cake. You'll need ½ cup of red wine for any cake pan with a 6 cup capacity OR use 1 cup of red wine for a cake pan with a 12 cup capacity.
- 1 & ½ - 2 CUPS: make the Red Wine Chocolate cake and the Strawberry Red Wine Sauce. The Strawberry Red Wine Sauce gives fruity sweetness.
- What should I serve the cake with?
- I like to serve the cake with my Strawberry Red Wine Sauce and mascarpone whipped cream (recipe provided in this post). But, you could also serve with normal whipped cream, vanilla ice cream, or simply with powdered sugar.
- What kind of red wine should I use?
- Any leftover wine you have on hand. I've used cabernet sauvignon and pinot noir. Depending on the wine wine, you'll get slightly different flavor profiles.
- What bundt pan did I use?
- I used this beautiful Nordic Ware Charlotte Cake Pan that made a lovely 8-inch cake. The release was FLAWLESS.
- Can I bake this without a bundt pan?
- Yes, I baked this in a 9x9 square baking pan at 350°F for 40-45 minutes and until a wooden skewer comes out clean or with few crumbs.

Leftover Red Wine Chocolate Cake
Ingredients
Red Wine Chocolate Cake*
- 1 cups granulated sugar
- ¾ cup all-purpose flour
- ½ cup cocoa powder
- ¾ teaspoon baking soda
- ¾ teaspoon baking powder
- ½ teaspoon kosher salt
- ½ cup red wine**
- ½ cup buttermilk
- 2 eggs
- ¼ cup vegetable oil
- ½ cup sour cream
Red Wine Strawberry Sauce (Optional)
- 1 cup red wine I used cabernet sauvignon
- ¼ cup granulated sugar
- 1 lb strawberries I used fresh and sliced them
Mascarpone Whipped Cream (Optional)
- 1 cup heavy whipped cream cold
- ½ cup powdered sugar
- 4 oz mascarpone cheese softened slightly
- 1 teaspoon vanilla extract
