Fresh Lime Curd is perfect as a rich dessert topping, filling or spread. It's buttery and sweet with intense tart lime flavor.

6 tablespoons lime juice zest from limes ¾ cup granulated sugar ¾ cup unsalted butter 2 eggs large, room temperature
Cook Time: 15 Min
Ingredients
Step 1
Mix/beat two eggs together!
Step 2
Heat a small sauce pot with 1 - 2 inches of water until softly bubbling/simmering.
Step 3
Place a heat proof bowl with the c ingredients on top of the double boiler.
Step 4
While the butte is melting, stir it slowly until all the butter is completely melted.
Step 5
Mix 2 tablespoons of hot lime mixture into the eggs and stir/blend using a whisk or hand blender/immersion blender.
Step 6
Slowly whisk/blend egg mixture into the lime mixture and combine fully.
Step 7
Return water to a simmer. Continuously stir the mixture until it thickens & coats the back of a wooden spoon.
Step 8
Transfer to a jar and cool to room temperature. Refrigerate until ready to use.
