Blackberry Popsicles

These Blackberry Popsicles feature real fruit in every bite! They are so simple but so delicious and perfect when you're looking for the perfect balance of sweet and tart.

Ingredients

  • 16 ounces frozen blackberries
  • 1 & ½ cups water
  • 1 cup granulated sugar

Instructions

  • In your high powered blender, pour in frozen blackberries to defrost. Set aside. Next, in a small pan, bring water and sugar to a boil for about 1 minute. Occasionally, whisk until the sugar is completely dissolved. Remove from heat and allow to cool to warm to the touch OR room temperature (about 30 minutes - 45 minutes).
  • After the simply syrup has cooled, add it to the blender. Close the lid and blend on high speed for 1-2 minutes until smooth.
  • Strain liquid using a fine mess strainer (to remove the seeds) into a large bowl. Use the back of a spoon to help liquid pass through.
  • Pour liquid into the popsicle molds. Attach lid and stick in popsicle sticks. Freeze in the freezer overnight.
  • Remove popsicles from mold when ready to enjoy. Eat and enjoy.

Notes

Not all popsicles molds are the same. This mixture works perfectly for my mold. You could potentially need more or less depending on what kind of popsicle mold you use.
After removing these popsicles from the popsicle mold, either serve them immediately or store them in an airtight container or freezer bag for up to 1 month.
Use a container/bowl with a spout or a pitcher or funnel for easier pouring into the popsicle mold.
Make sure that you leave a little unfilled space (about ¼- ½ an inch) at the top of the molds to accommodate the liquid slightly expanding in the freezer. This also helps to make it easier when transporting the filled molds to the freezer.
