Ricotta Vanilla Bean Waffles

Ingredients

  • cup unsalted butter, melted
  • 2 eggs, large
  • ½ tablespoon vanilla bean paste
  • ¾ cup ricotta cheese
  • ¾ cup whole milk
  • 1 & ½ cup all-purpose flour
  • ½ teaspoon baking soda
  • 2 teaspoon baking powder
  • 4 tablespoon granulated sugar
  • ½ teaspoon salt

Mascarpone Cream (Optional)

  • ½ cup mascarpone cheese OR use ¼ cup for a milder taste
  • ½ cup greek yogurt, plain or vanilla
  • 1 teaspoon vanilla bean paste
  • 2 tablespoon honey

Instructions

  • Add wet ingredients to your food processor.
  • Blend until smooth.
  • Add in dry ingredients. Blend until combined in the food processor.
  • Carefully remove the blade and use a silicone spatula to gently mix the batter to make sure all the flour is combined.
  • Cook waffles until golden according to your waffle maker's direction. Use non-stick spray as needed.
  • Enjoy, and serve with fresh fruit and mascarpone cream. Or, maple syrup, butter or toppings of your choosing.

Mascarpone Cream (Optional)

  • In a bowl, whisk ¼ - ½ cup of mascarpone cheese, ½ cup of Greek yogurt, 1 teaspoon of vanilla bean paste or extract and 2 tablespoon of honey until combined.
