Lime Popsicles

Make these delicious Lime Popsicles and enjoy the fresh, zesty and sweet taste of summer!

Ingredients

  • 3 cups water
  • 1 cup granulated sugar
  • cup lime juice + zest about 5 small limes
  • green food coloring optional

Instructions

  • In a small pan, bring water to a simmer and whisk in sugar until completely dissolved. Remove from heat and allow to cool to room temperature.
  • Wash, dry, zest and juice limes.
  • In a blender, combine lime juice, zest, simple syrup and food coloring (optional) until fully incorporated. I like using a blender to help blend up some of the zest into the mixture but you can also just whisk it together in a bowl just realize you'll have larger zest pieces in your popsicles OR you can strain it out before filling the molds.
  • Place popsicle mold on a baking pan. Carefully pour the mixture into the popsicle mold leaving a little bit on space at the top. Add popsicle lid and popsicle sticks. Place in freezer for 4-7 hours.
  • Remove popsicles from mold when ready to enjoy. Eat and enjoy.

Notes

  • Not all popsicles molds are the same. This mixture works perfectly for my mold. You could potentially need more or less depending on what kind of popsicle mold you use.
  • After removing these popsicles from the popsicle mold, either serve them immediately or store them in an airtight container or freezer bag for up to 1 month.
  • Use a container/bowl with a spout or a pitcher or funnel for easier pouring into the popsicle mold.
  • Make sure that you leave a little unfilled space (about ¼- ½ an inch) at the top of the molds to accommodate the liquid slightly expanding in the freezer. This also helps to make it easier when transporting the filled molds to the freezer.
