Warm Goat Cheese Sun-dried Tomato Spread

The oven is the main 'tool' to create this Warm Goat Cheese Sun-dried Tomato Spread, creating a delicious spread full of flavors and textures. Dig into sundried tomatoes, basil, capers, roasted garlic gloves, warm goat cheese served with grilled baguette.

  • 1 bulb garlic
  • 2 tablespoon olive oil
  • 10 oz sun-dried tomato discard oil*
  • basil chiffonade
  • 3 tablespoon capers
  • 10 oz goat cheese
  • ½ cup olive oil
  • 1 baguette sliced and grilled (or bake into crostini)**


  • Preheat oven to 400°F.
  • Peel whole bulb of garlic. Place in baking dish with 2 tablespoon of olive oil. Toss and bake for 10 minutes.
  • Slice sun-dried tomatoes*, goat cheese into discs (~¼ inch thickness) and chiffonade basil. Keep ingredients seperate adn set aside.
  • Lower oven to 350°F and add in sundried tomatoes and toss, bake for another 10 minutes.**
  • Add in capers and toss. Bake for 10 minutes.
  • Add in ½ the basil, mix and bake for another 10-15 minutes.
  • Place goat cheese on a small baking pan and bake for 15 minutes until goat cheese is warm.***
  • After removing both dishes from the oven, in your serving dish add in ½ cup of olive oil, turn sundried tomato mixture, top with sliced goat cheese.
  • Season with ground pepper and sea salt. Top with the rest of basil. Enjoy with grilled bread or crostini.


*Leftover sundried tomato oil can be used for dressings, frying oil or eaten with bread
**While the spread was baking, I used my grill pan and grilled my bread
***Optionally, you can place the goat cheese right on top of the sundried tomato mixture if you are planning on serving from that dish.
