Yogurt Orange Juice Loaf

Sweet, soft, orange juice yogurt loaf. A slice is a perfect way to start out your day. The batter is completely made in a food processor in just a few clicks.

This Yogurt Orange Juice Loaf is the perfect way to start your morning. It's super soft, fluffy with a delicate citrus flavor. The taste is similar to a pound cake but while this recipe doesn't have a ton of orange flavor you can always use orange zest or extract from delicate flavor to citrus explosion! The orange juice syrup and drizzle gives the loaf added flavor. Oh yeah, did I mention I made the batter completely in a food processor?

This recipe was something I literally threw together in a food processor and hoped something delicious would happen. While, trying to limit the amount of grocery store trips in quarantine, I found myself without all-purpose BUT a whole bag of bread flour. With baking as my only solace throw the pandemic, I rummaged throw my fridge, pulled out the greek yogurt and Orange juice and got to work. The result, this incredibly easy breakfast loaf!

How to Make Yogurt Orange Juice Loaf

  1. Preheat your oven to 350°F. Line a 9"x6"x2.5" loaf pan with parchment paper and spray with nonstick spray and set aside.
  2. In a food processor, add in yogurt, orange juice, eggs, sugar, and vanilla.
  3. Puree in food processor until combined.
  4. Take the lid off and add in flour, baking powder, and salt. Puree until combined while slowly adding in the melted butter.

  1. Remove lid and blade. Use a spatula to finish folding any leftover flour in the batter.
  2. Pour into prepared loaf pan and smooth the top.
  3. Bake until a toothpick comes out clean from the middle and the top is golden. (60-70 minutes).
  4. When the loaf is done baking, cool in the pan for 10 minutes. Transfer the loaf to a cooling rack and poke holes in the cake using a toothpick or fill the orange juice syrup in a squeeze bottle and squeeze into the cake. Brush the loaf all over with the rest of the syrup.
  5. Pour orange juice glaze over the cooled loaf and spread. The glaze will slowly harden or slice enjoy immediately.

Orange Juice Syrup

  1. While the cake is baking, in a small saucepan combine orange juice and sugar.
  2. Heat over medium until the it boils and whisks frequently while it becomes slightly thickened (about 10 minutes)
  3. Pour into a bowl and set aside.

  1. In a bowl, add a tablespoon of orange juice and powdered sugar together.
  2. Whisk in small circles in the center until thickened.
  3. Once, it becomes too thick to stir, add in the other tablespoon of orange juice.
  4. Whisk slowly until combined.

  • How can I make this orange-flavored? This loaf has a very delicate citrus flavor. Add in a teaspoon of orange extract to the batter or add in orange zest in the glaze for more orange flavor.

Ingredients
  

  • nonstick spray
  • ⅓ cup orange juice
  • 1 cup full fat yogurt I used greek full fat
  • 1 & ⅓ cup granulated sugar
  • 3 eggs
  • ½ teaspoon vanilla extract
  • 1 & ½ cups bread flour or all-purpose flour
  • 2 teaspoon baking powder
  • ½ teaspoon kosher salt
  • ⅓ cup melted butter unsalted

Orange Juice Syrup

  • ⅓ cup orange juice
  • 2 tablespoon granulated sugar

Orange Juice Glaze

  • 1 cup powdered sugar
  • 2 tablespoon orange juice

Instructions
