My inner child was ecstatic with these Cookie Butter Drumstick Ice Cream. And, you'll love this triple cookie butter frozen treat - cookie butter ice cream, cookie butter center and cookie butter magic shell.
I'm dreaming of summer - sunshine and good times. There's nothing like ice cold ice cream on a hot day. While there's quite a few flavors of Nestle Drumsticks, there is NOT a cookie butter flavor, which is a darn SHAME! And, that is where this recipe comes in. This ice cream treat is really creamy, crunchy, and of course, delicious. Not to mention, this method is an easy way to re-create custom version of your favorite childhood ice cream. I also made these supersized thanks to some silicone molds.
Did I mention this recipe is only 4 ingredients? That's because I cheated and used store bought ice cream and sugar cones. BUT, it's because Trader Joe's makes a cookie butter ice cream, thick vanilla ice cream with lots of cookie butter swirl chunks. The center is just pure cookie butter and the outside has a hard Cookie Butter Magic Shell. AND, while this recipe is for a cookie butter drumstick, the flavor possibilities are endless.
Cookie Butter Drumstick Ingredients
- Cookie Butter Ice Cream - Trader Joe's has Cookie Butter Ice Cream that they sell by 1 quart. You alternatively could use chocolate or vanilla ice cream instead. You'll need about 3.5 cups of ice cream for this recipe.
- Coconut Oil - Needs to be refined to ensure there is no coconut flavor. This is how the magic happens. Coconut oil is in a solid phase but when heated it melts to a liquid.
- Cookie Butter - also called Biscoff spread. Has lots of warm delicious spices.
- Sugar Cones - use store bought sugar cones.
Cookie Butter Drumstick Supplies
- Silicone Mold Set
- Large (2.7") : to make a perfect giant sphere for our drumstick
- Small (1"): to make a mini sphere of pure cookie butter goodness
- Food Safe Gloves: to touch and mold the cookie butter center and cookie butter ice cream sphere. Keep your hands clean from all the stickiness.
- Plastic Wrap or Wax Paper: helps prevent freezer-burn
- Small Offset Spatula: for smoothing out and filling ice cream cones
- Ice cream holder: something to hold your ice cream upright in the freezer so it does not tip over. I used a sundae rack from Anthropologie which is currently out of stock. While I have not tried these mentions, these could work for a DIY ice cream holder:
- DIY Ice Cream Holder (need a shallow wooden box, cardboard, glue, scissors and sprinkles)
- Milk Bottles
- Empty Egg Carton
- A tall and wide microwave safe glass (needs to bigger than 3 inches wide and 3 inches deep) I used my 2 cup Pyrex measuring cup, use to make cookie butter magic sauce and dip ice cream cone in.
- Whisk: to combine cookie butter and coconut oil together,
How to Make Cookie Butter Drumstick Ice Cream
There are quite a few steps. But, that's to provide YOU with as much detail as possible for whatever drumstick ice cream creations you come up with.
Cookie Butter Magic Shell
- In a tall and wide microwave-safe glass, I used a Pyrex measuring cup, microwave cookie butter for 30-45 seconds until fully melted.
- Add coconut oil to the melted cookie butter and stir until combined. Use as directed.
To store and reheat Cookie Butter Magic Shell: Keep at room temperature. Microwave for 30 seconds - 1 minute until fully melted. Stir and use.
Assembly
- Put cookie butter into either a pastry bag or ziplock bag. Snip a bit off the end. Pipe cookie butter into 6 cavities of the smallest semi-sphere mold. Smooth out with an offset spatula. Place in the freezer for 15-20 minutes.
- Pop out the cookie butter, and press 2 of the semi-spheres together (flat side touching) until a sphere is former. Smooth out with hands. Repeat with until you have 3 spheres total. Set aside. Gloves recommended.
- Place 3 sugar cones into ice cream holder.
- Fill each cone with 1 teaspoon of melted magic shell.
- Then, fill the cone with softened ice cream to the top.
- Wrap the top of the ice cream cone in plastic wrap and set in the freezer.
- Take softened ice cream and put into 3 of the large semi-sphere cavities except for a little in the middle and place a cookie butter sphere in the center. Smooth out as needed.
- Fill the 3 other cavities with softened ice cream except for a little in the middle. Smooth out as needed.
- Put plastic wrap or wax paper on top of the ice cream, press gently. Freeze for 6 hours - overnight.
- Remove plastic wrap on the cones and ice cream. Pop out 1 ice cream semi-sphere with the cookie butter and one without. Put uncovered cookie butter side down to complete a sphere. Gloves recommended.
- Press and smooth out the lines.
- Place on top of the ice cream cone. Press gently to connect.
- Cover ice cream with plastic wrap over. Freeze for 1 hour.
- Remove plastic wrap, dip the drumstick into the melted Cookie Butter Magic Shell a little bit past the ice cream. Working only 1 drumstick at a time, let excess drip off for 1 - 2 minutes and placing it immediately back into the freezer on your ice cream holder for at least 1-2 minutes. Repeat with remaining ice cream.
- Repeat until you have coated the ice cream drumsticks 2-3 times, this provided the fullest coverage.
- Enjoy immediately.
Recipe Notes
- No ice cream holder? I used a sundae rack from Anthropologie (currently out of stock). But, Here are a few alternative ideas, that while I personally haven't tried, they look like they could work. Whatever you use you want the ice cream to be straight and not tip over from the weight.
- You even try using whatever glasses you have on hand, and fill it with sprinkles or candy like m&m.
- Use extra small vases or tall and thin glasses where the tip - middle of the cone sits.
- DIY an ice cream holder with an empty egg carton.
- Not a cookie butter fan? While I have not tried this recipe with other ice cream or flavors the principle stick work with peanut butter or Nutella.
- I don't live by a Trader Joe's? You can use Biscoff Cookie Butter which can be found in most grocery stores or Targets in the aisle with the peanut butter. Also, you can substitute cookie butter ice cream for good ole vanilla or try a caramel swirl ice cream instead.
- How long will these last in the freezer? I suggest enjoying immediately, if you freeze for a long period of time, the Cookie Butter Magic Shell will crack in the freezer.
- Leftover Cookie Butter Magic Shell? Store in an airtight container at room temperature, microwave for 30 seconds - 1 minute, stir well before topping on ice cream again.
