These Lime Popsicles are incredibly refreshing with simple ingredients. They are deliciously tart and sweet. You'll love these especially during hot weather and the summer. With only 4-ingredients (one ingredient is WATER), you just need to make a 5-minute simple syrup, blend, pour, freeze in molds and done. Speaking of which, I highly recommend these popsicle molds on Amazon! These popsicles are perfect for BBQ parties, poolside snacks and more.

Why You'll Love this Recipe
- Only 4 ingredients (One is water! and one is totally optional.)
- Only 10 minutes of prep and cooking time
- Full of lime flavor
- A delicious summer treat for any occasion
Ingredients
All you need is 4 ingredients to make these Lime Popsicles!
- Granulated sugar – The sweetener in the popsicles
- Limes – I recommend getting fresh limes to use both the juice and the zest
- Water - heated with sugar to create our simple syrup
- Green Food Coloring (Optional) - I found that while testing this recipe the popsicles come out really pale in color, almost yellow like a lemon popsicle. I use just a few drops of green food coloring to give a really natural looking icy green colored popsicle.
Step-by-Step Instructions
- In a small pan, bring water to a simmer and whisk in sugar until completely dissolved. Remove from heat and allow to cool to room temperature.
- Wash, dry, zest and juice limes.
- In a blender, combine lime juice, zest, simple syrup and food coloring (optional) until fully incorporated. I like using a blender to help blend up some of the zest into the mixture but you can also just whisk it together in a bowl just realize you'll have larger zest pieces in your popsicles OR you can strain it out before filling the molds.
- Place popsicle mold on a baking pan. Carefully pour the mixture into the popsicle mold leaving a little bit on space at the top. Add popsicle lid and popsicle sticks. Place in freezer for 4-7 hours.
- Remove popsicles from mold when ready to enjoy. Eat and enjoy.
Expert Tips
- Not all popsicles molds are the same. This mixture works perfectly for my mold. You could potentially need more or less depending on what kind of popsicle mold you use.
- When making creamy popsicles with milk or cream, always use a tablespoon of cornstarch so the popsicles won’t be icy and will stay creamy when they freeze.
- After removing these popsicles from the popsicle mold, either serve them immediately or store them in an airtight container or freezer bag for up to 1 month.
- Use a container/bowl with a spout or a pitcher or funnel for easier pouring into the popsicle mold.
- Make sure that you leave a little unfilled space (about ¼- ½ an inch) at the top of the molds to accommodate the liquid slightly expanding in the freezer. This also helps to make it easier when transporting the filled molds to the freezer.
Recipe FAQ
I recommend freshly squeezed lime juice in this recipe especially because you can also use the zest. While you certainly can try using bottled lime juice, we think fresh tastes better.
Don't want to buy a popsicle mold? Instead you can use little paper cups (like dixie cups), pour lime mixture, put the popsicle sticks in and freeze. When frozen and ready to enjoy just tear off the paper and enjoy.
Most popsicle molds come with some popsicles sticks. If you need to buy more you can find popsicle sticks just about anywhere, including Walmart's craft section, craft stores like Michaels and Joann's, and even online retailers like Amazon. You can even find popsicle sticks in your local Dollar Tree. Just make sure to use food safe popsicle sticks.
